Honey









Honey Cookies

1/2 cup butter
2/3 cup sugar
2 tablespoons honey
1 egg yolk
1 teaspoon cinnamon
1 3/4 cups self-rising flour [I substitute whole wheat flour + 2 teaspoons baking powder + 1/2 teaspoon salt]

extra cinnamon and sugar combined in small bowl

Preheat oven to 350 degrees F.
Grease cookie sheet.

Beat the butter and sugar in a bowl until creamy.
Beat in the honey and egg yolk. Add cinnamon and flour and mix. Dough will be soft. Shape dough into balls. (If dough is too sticky, add extra flour before shaping.) Teaspoon-size amounts of dough yields about 30 cookies.

Roll balls cinnamon and sugar and put on greased cookie sheet. Bake in preheated oven (350 degrees F) for 12 to 15 minutes. Cookies are ready when golden brown. Remove cookies from oven, let cool a few minutes, then transfer to cookie rack or plate to finish cooling.
