EASY CHICKEN AND BROWN RICE SALAD


Trim Healthy Mama E style meal idea.

SERVES: 3 1-cup servings

INGREDIENTS
1 c plain, cooked brown rice
1 can chicken breast or leftover shredded chicken meat
1 c diced zucchini
2 diced Roma tomatoes
A few mini sweet peppers, chopped and seeded
1 small onion, chopped
2 tsp olive oil
3 tsp lemon juice (or lime)
2 teaspoons of minced garlic
Pink Himalayan salt, and pepper, to taste
½ tsp each fresh marjoram, oregano and cilantro -adjust according to your tastes


In a mixing bowl, combine olive oil, lemon or lime juice, garlic, salt, pepper and herbs and mix well
Add diced zucchini and mix to coat well. Marinate several hours in refrigerator (overnight if possible)
Chop or dice remaining veggies
Add to mixing bowl, along with rice and chicken. Mix well to coat.
Adjust seasonings as desired.
Refrigerate for a few hours or eat right away. Even better the next day!
