Q&E Sausage and Potato Salad

Easy potato and sausage salad


2 1/2 pounds new potatoes, quartered
1 (16 ounce) package Hillshire Farm® Smoked Sausage (any variety), sliced
1 medium green bell pepper, chopped
4 green onions, sliced
1/2 cup cherry tomatoes, quartered
2 stalks of celery, diced



Dressing: 1/4 cup vegetable oil
3 tablespoons white or red wine vinegar
2 tablespoons whole-grain Dijon mustard
1 teaspoon salt
1/4 teaspoon ground black pepper
1 garlic clove, minced

Boil potatoes for 12 minutes, when tender; drain

Heat a large skillet over medium when pan is hot add sausage and cook, stirring frequently for 3 to 4 minutes or until sausage is lightly browned. Drain on a paper towel lined plate.

Add sausage slices and potatoes to a bowl with the green pepper, tomatoes, celery, & onions

Combine dressing ingredients in large bowl; whisk and pour over potatoes and sausage.

Serve immediately or refrigerate.
